  • 2 cups broccoli florets Fresh or frozen can be used.
  • 1 lb chicken breasts, cubed Can use rotisserie chicken for convenience.
  • 1 cup shredded cheddar cheese Add more for extra cheesiness.
  • 1 cup cream of chicken soup Can substitute with gluten-free version if needed.
  • 1/2 cup chicken broth Add more for desired consistency.
  • 1 teaspoon garlic powder Adjust to taste.
  • to taste salt and pepper Season according to preference.

Cooking Instructions
  1. In a crockpot, combine the cubed chicken, cooked rice, broccoli, cream of chicken soup, and chicken broth.
  2. Season with garlic powder, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  5. Stir in the shredded cheddar cheese and let it melt before serving.
  6. Serve warm and enjoy!

Notes

For added richness, mix sour cream before serving. Leftovers can be refrigerated for up to 4 days or frozen for 3 months. Reheat with a splash of broth if dry.
