  • 4 pieces boneless (skinless chicken breasts)
  • 2 pieces bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional) Optional ingredient
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish) For garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place chicken breasts in the dish, drizzle with 1 tbsp olive oil, and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. Rub the seasoning evenly on both sides.
  3. Toss sliced peppers and onions with remaining 1 tbsp olive oil and arrange them around and over the chicken.
Baking
  1. Bake uncovered for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  2. Sprinkle mozzarella and Parmesan over the chicken and peppers, then return to the oven for 3–5 minutes, or until cheese is melted and bubbly.
Serving
  1. Garnish with parsley and serve hot with rice, pasta, or a side salad.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat in the oven or microwave when ready to enjoy.
