Preparation
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- Prepare the brownie mix according to package instructions, adding 2 tablespoons of water, and pour into the prepared pan.
- Bake for 20-25 minutes or until set. Let cool.
Cheesecake Filling
- In a large bowl, beat softened cream cheese until smooth. Add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing until just combined, then add sour cream and salt.
- Pour the cheesecake mixture over the cooled brownie layer.
- Drizzle caramel sauce on top of the cheesecake mixture.
- Bake for 50-60 minutes or until the center is set.
- Let cool at room temperature, then chill in the refrigerator for at least 4 hours before serving.
- Optional: Top with chocolate chips before serving.
Notes
For best results, use room temperature cream cheese. Keep an eye on the baking time to avoid overbaking. This cheesecake can be frozen and thawed for later use.
