For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 2 cups cream cheese, softened Use room temperature for smoother batter.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract Consider substituting with almond extract for variation.
  • 2 cups chopped apples Granny Smith works great, but Honeycrisp or Fuji can be used too.
  • 1 cup caramel sauce Extra caramel can be drizzled before serving for gourmet touch.
  • 1 teaspoon cinnamon Feel free to add a pinch of allspice for more spice.
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of the prepared baking dish to form the crust.
Making the Filling
  1. In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition.
  2. Stir in the vanilla extract, then fold in the chopped apples, cinnamon, and nutmeg.
Baking
  1. Pour the cream cheese mixture over the crust in the baking dish and drizzle caramel sauce on top.
  2. Bake for 30-35 minutes until the center is set.
Cooling and Serving
  1. Let it cool, then refrigerate for at least 2 hours before cutting into bars.
  2. Serve chilled and enjoy with extra caramel or whipped cream if desired.

These bars are perfect for gatherings, and they can be stored in the fridge for 5-7 days or frozen for up to 3 months. Don't rush the chilling process for the best flavor!
