Filling
  • 2 cups shredded rotisserie chicken Use pre-cooked for convenience.
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Buffalo sauce Adjust to taste for spiciness.
  • 1 packet ranch seasoning

  • 10 egg roll wrappers Follow package instructions for wrapping.
  • oil for frying oil Can be used for deep frying or air frying.

Method
 

Preparation
  1. In a bowl, mix the shredded rotisserie chicken, cheddar cheese, mozzarella cheese, Buffalo sauce, and ranch seasoning until well combined.
  2. Lay an egg roll wrapper on a clean surface. Place a spoonful of the chicken mixture on the wrapper and fold it according to package instructions.
Cooking
  1. Preheat the air fryer to 375°F (190°C). Lightly spray the egg rolls with oil and place them in the air fryer basket in a single layer.
  2. Cook for 10-12 minutes, or until golden brown and crispy, flipping halfway through.
  3. Alternatively, fry them in hot oil or bake at 425°F (220°C) for about 15-20 minutes until crispy.

Notes

Serve with ranch or blue cheese dipping sauce and celery sticks. For best results, spray egg rolls with oil before cooking.
