Preparation
- Preheat the oven to 400 degrees Fahrenheit.
- Cook the turkey bacon according to package instructions until crispy. Remove and chop into small chunks.
- In the same pan, add olive oil, chopped broccoli, and onion. Sprinkle with salt and pepper and sauté for about 5-10 minutes until softened.
- In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until nicely blended.
Assembly & Cooking
- Remove the sautéed vegetables from heat and mix them with the chopped turkey bacon in a large greased baking dish, spreading evenly.
- Pour the egg mixture over the top, ensuring all ingredients are covered. Add extra cheese on top if desired.
- Bake in the oven for 20 minutes. Let cool, then cut into squares.
Notes
This dish can be made ahead of time and stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat before serving.
