Vegetables
  • 1 head broccoli, chopped
  • 1/2 large yellow onion, diced
Meat
  • 5 slices turkey bacon Cook according to package instructions
Dairy
  • 8 large eggs
  • 1/2 cup shredded cheddar cheese Additional cheese for topping if desired

  • 1 tbsp olive oil
  • 1/2 tsp garlic powder For flavor enhancement

Method
 

Preparation
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cook the turkey bacon according to package instructions until crispy. Remove and chop into small chunks.
  3. In the same pan, add olive oil, chopped broccoli, and onion. Sprinkle with salt and pepper and sauté for about 5-10 minutes until softened.
  4. In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until nicely blended.
Assembly & Cooking
  1. Remove the sautéed vegetables from heat and mix them with the chopped turkey bacon in a large greased baking dish, spreading evenly.
  2. Pour the egg mixture over the top, ensuring all ingredients are covered. Add extra cheese on top if desired.
  3. Bake in the oven for 20 minutes. Let cool, then cut into squares.

Notes

This dish can be made ahead of time and stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat before serving.
