- In a shaker, muddle the mint leaves with the simple syrup and fresh pineapple juice until fragrant.
- Add the bourbon and fill the shaker with ice.
- Shake well until chilled.
- Strain into a glass filled with ice.
- Garnish with a pineapple wedge and a sprig of mint before serving.
Notes
Serve in a tall glass for presentation. The cocktail can be stored in the fridge for up to 24 hours, but it's best enjoyed fresh.
