Muffin Base Ingredients
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder
Fruits
  • 10 oz fresh blueberries Can substitute with frozen blueberries.

Preparation
  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
  3. Add plain flour, vanilla-flavored protein powder, baking powder, and baking soda. Stir gently — don’t overmix!
  4. Carefully fold in the blueberries using a spatula.
  5. Spoon the batter into a lined muffin pan, dividing it to make 12 regular-sized muffins.
  6. Bake for about 15-20 minutes or until a toothpick inserted comes out clean.
  7. Let them rest for a few minutes before moving to a wire rack.

Notes

Serve warm with Greek yogurt or a sprinkle of cinnamon. For best flavor, let muffins cool before serving.
