  • 3 pieces ripe bananas (about 1 ½ cups mashed) Make sure your bananas are super ripe for maximum sweetness.
  • 2 cups rolled oats You can use quick oats if preferred.
  • cup honey or pure maple syrup For a nutty twist, you can replace honey with peanut butter.
  • 2 large eggs For a vegan option, swap for flax eggs.
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract; stir till well combined.
  4. Grease an 8×8-inch baking dish or line it with parchment paper.
  5. Pour the mixture into the prepared dish and spread it evenly.
  6. Bake for 25-30 minutes until golden brown. Let cool for at least ten minutes before slicing into squares.

Notes

Serve warm with a drizzle of honey or Greek yogurt, sprinkle with nuts or chocolate chips for added flavor. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
