  • 1 pound Italian sausage (mild or spicy)
  • 4 medium potatoes, diced
  • 1 piece bell pepper, diced
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the diced potatoes, bell pepper, onion, olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the veggies out on a baking sheet.
  4. Nestle the Italian sausages among the veggies on the sheet.
Cooking
  1. Bake for about 25-30 minutes, or until the sausages are cooked through and the potatoes are golden and crispy.
  2. Garnish with parsley before serving.

Notes

For a crispier finish, broil the dish for the last couple of minutes. Feel free to swap in different veggies for variety or use chicken sausage or vegan sausage for a different twist.
