  • 1 teaspoon Garlic Powder

  • 1 cup Bell Peppers, diced
  • 1 cup Spinach, chopped
  • 1/2 cup Sun-Dried Tomatoes

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the cottage cheese, eggs, and Parmesan cheese until well combined.
  3. Stir in the chives, garlic powder, paprika, salt, and pepper.
  4. Add the bell peppers, spinach, and sun-dried tomatoes, folding gently to combine.
  5. Pour the mixture into a greased baking dish and smooth the top.
Cooking
  1. Bake for about 25-30 minutes or until set and golden.
  2. Let cool slightly before slicing and serving.

Notes

Serve with a light salad or crispy toast. Leftovers keep in the fridge for 3-4 days or in the freezer for up to three months.
