Ingredients
  

For the donuts
  • 2 cups apple cider Reduce apple cider to about a cup before using.
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted For brushing before coating.
For the coating
  • 1 cup granulated sugar For coating.
  • 2 tablespoons ground cinnamon For coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the donut pan.
  2. Boil the apple cider in a saucepan until it reduces to about a cup. Cool it down.
  3. In one bowl, whisk together the dry ingredients: flour, sugars, baking powder, baking soda, and spices.
  4. In a separate bowl, mix together the cooled apple cider, eggs, oil, and vanilla extract.
  5. Slowly combine the wet and dry ingredients. Don’t overmix; a few lumps are fine.
  6. Fill the donut pan about 2/3 full with the batter.
Baking
  1. Bake for 10-12 minutes, or until a toothpick comes out clean.
  2. While the donuts cool, mix sugar and cinnamon for the coating.
Coating
  1. Brush each donut with melted butter and then dunk them in the cinnamon sugar.
  2. Serve warm and enjoy!

Notes

Keep leftovers in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. Experiment with different spices for variations.
