Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. Stir in rolled oats (or almond flour), cinnamon, and baking powder until well combined.
  4. Gently fold in the diced apples into the mixture.
Baking
  1. Pour the batter into the baking dish, spreading it out evenly.
  2. Bake for 35-40 minutes, or until golden and a toothpick comes out clean.
  3. Let it cool slightly before slicing and serving.
