  • 2 cups cottage cheese
  • 3 large eggs
  • 1 large apple, peeled and finely diced Use a mix of sweet and tart apples for layered flavor.
  • 1/2 cup rolled oats or almond flour
  • 1/4 cup maple syrup or honey Adjust sweetness to taste.
  • 1 1/2 tsp ground cinnamon Add more if you love cinnamon!
  • 1 tsp vanilla extract
  • 1 tsp baking powder Essential for preventing sogginess.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. Stir in your oats (or almond flour), cinnamon, and baking powder.
  4. Fold in the diced apples until they’re nicely coated.
  5. Pour the mixture into the baking dish and spread it evenly.
Baking
  1. Bake for 35-40 minutes until it’s golden and a toothpick comes out clean.
  2. Let it cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Can freeze for up to 3 months. Reheat in the microwave or oven.
