Main ingredients
  • 6-10 apples 6-10 apples (cores, peels, or the ones you forgot about in the back of the fridge work too!) Use any type of apples you have on hand.
  • 1 cup 1 cup sugar This is the 'encouragement' for fermentation.
  • enough to cover the apples filtered water Ensure it covers the apple pieces.
  • 1 jar A large jar (about a quart size or bigger) Required to store the apple mixture during fermentation.

Method
 

Preparation
  1. Chop your apples into small pieces, including cores and peels.
  2. Stir sugar into water until dissolved.
  3. Place apple pieces into the jar and pour sugar water over them. Make sure apples are submerged.
  4. Cover the jar with cheesecloth or coffee filter secured with a rubber band.
Fermentation
  1. Place the jar in a dark, warm place for 3-4 weeks, stirring or shaking every few days.
  2. After 3-4 weeks, strain the liquid from the solids.
  3. Return the liquid back to the jar, covered loosely, and let it ferment for another 3-4 weeks.
  4. Taste the vinegar periodically until it reaches your desired tanginess.

Notes

Store the finished apple cider vinegar in a clean, dark bottle or jar, and keep it in the pantry or a dark cupboard. Use it within a year for best quality. Experiment with spices, herbs, or other fruits for different flavors.
