  • 2 pieces boneless, skinless chicken breasts, cut into tenders
  • 1 cup almond flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 large eggs, beaten
  • 1 tablespoon water

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine almond flour, salt, pepper, garlic powder, and paprika. Mix well.
  3. In another shallow dish, whisk together the eggs and water.
  4. Dip each chicken tender into the egg mixture, letting any excess drip off.
  5. Dredge the chicken tender in the almond flour mixture, pressing gently to ensure it’s fully coated.
  6. Place the coated chicken tenders on the prepared baking sheet.
  7. Bake for 20-25 minutes, flipping halfway through, until the chicken is cooked through and golden brown.

Notes

These tenders can be served with honey mustard or spicy ranch, and pair well with a garden salad or in tacos. The tenders keep well in the fridge for up to 3 days, and can be frozen for about 3 months. Reheat in the oven until warm and crunchy.
