Preparation
- Season your roast with salt and pepper on all sides.
- Sear the roast in a hot skillet for 2β3 minutes per side until golden brown.
- Layer sliced onion, carrots, and potatoes into the slow cooker.
- Mix in minced garlic, thyme, bay leaf, and Worcestershire sauce.
- Place the seared roast atop the veggies.
- Pour beef broth around the sides of the roast.
Cooking
- Cover the slow cooker and cook on low for 8 hours or high for 4β5 hours.
- Remove the bay leaf before serving. Let the pot roast rest for 10 minutes before slicing.
Notes
For a richer flavor, try adding a splash of red wine. To make a thicker gravy, mix a tablespoon of cornstarch with water and add it in the last 30 minutes of cooking.
