Preparation
- Soak the pumpkin seeds in water for an hour or overnight to sprout.
- Rinse and drain the seeds then blend together with the dates until combined. Scrape the sides if necessary.
- Melt the chocolate.
- Line a pan with greaseproof paper, then add the pumpkin-date mixture and level it with your fingers.
- Pour the melted chocolate over the mixture, then tilt to spread it to the edges.
- Chill the mixture in the fridge to set, then slice into pieces.
Notes
Store in an airtight container in the fridge and consume within 3 days for optimal flavor and texture. Don’t skip the soaking for better taste and easier blending!
